The present document contains an evaluation of health risks associated with four classes of mycotoxins. Aflatoxins are treated in most detail because more is known about them than about the other mycotoxins and because there is epidemiological evidence associating health effects in man with exposure to aflatoxins. For the other 3 classes (ochratoxins, zearalenone, and trichothecenes), toxic effects in animals have been established and there is well-documented evidence that human exposure may occur, at least for the first two classes.
